Since the beginning of Jewish history, the symbol of the High Holidays has been the shofar, the ancient curved instrument used to inaugurate the Jewish New Year. Most often hewn out of a ram’s horn-although it can be made out of the horns of most kosher animals-it is trumpeted in the synagogue on Rosh Hashanah and is the highlight of the service.
